By adopting the ancient but abandoned Roman tradition of cultivating olive trees on those hills, Prediomagno is reaping the rewards of a gamble: bringing back a product of great quality in the heart of Monferrato. The farm is committed to producing extra virgin olive oil to the highest possible standard, with love for the land and devotion to the crop at every stage of the production chain.
  • Organic cultivation of olives and harvested entirely by hand.
  • Storage is in small, well-ventilated crates in order to ensure the product’s integrity during the transport to the olive-press.
  • Entirely mechanical cold extraction is carried out within a few hours after the harvest in a continuous cycle system.
  • Natural decanting takes place before the oil is transferred to stainless steel containers in a temperature-controlled environment.
  • The oil is not filtered.
  • The transfer to the end containers takes place in an atmosphere saturated with nitrogen in order to maintain the freshness.

Monferrino

In the Montemagno and Grana area, the olives are mostly obtained from the Cima di Melfi, Pendolino, Leccio del Corno, Grignan, Casaliva, Coratina and Leccino cultivars and are harvested at the end of October.
The oil is elegant and fulsome on the nose with fine fresh notes that recall green almonds and celery with balsamic notes. With medium fruitiness, it is full, enveloping and harmonious with a bitter taste and a livelier sensation of spiciness.
It goes well with seafood and meat and vegetable dishes and is recommended for bruschette and for seasoning medium- structured uncooked dishes.
